Roasted heirloom carrots

Ingredients 12 heirloom carrots of various colours Drizzle of olive oil Salt and pepper, to taste Roasted macadamia nuts crushed Watercress to serve Glaze ¼ cup butter 4 tbsp honey Pinch espellette

Preparation Pre-heat oven to 180 degrees. Pop carrots on a baking sheet and drizzle with olive oil, salt and pepper. Roast in oven for 25 minutes. Once the carrots are roasted you can glaze them. For the glaze melt the butter, honey and espelette in a small saucepan over a low heat. Drizzle the glaze over the carrots and return the baking sheet to the oven to roast for 2 additional minutes. Transfer to a platter, sprinkle with macadamia nuts and watercress to serve.
